Chai Tea at Home
Supplies for chai: (For each serving of chai)
1/2 cup half and half
1 pod of cardamom
1/4 inch cinnamon stick
1/4 inch of fresh ginger
1 clove
1-2 whole black pepper corns
1 cup water
1 black tea bag (Darjeeling is preferred)
Sugar to taste
Small sieve
Steps:
1. In a small saucepan, add the half and half, spices, water and tea. Bring to a boil and allow the mixture to simmer for 3 to 5 minutes.
2. Remove the saucepan from the heat and pour the chai through a small sieve into a mug. Discard the boiled spices. Sweeten with sugar to taste.
3. Serve chai with a platter of dried fruits and nuts for the perfect end to an Indian meal. Think about serving cashews, almonds, dates, dried apricots and dried mangos.
