Banana Bread

Tasty Tuesday: Banana Bread

In my house we love banana bread! My hubby and I, have two things we make with ripe bananas; banana smoothies and banana bread. Both are equally fast to make and delicious as a treat. Most times we can't wait for our bananas to turn dark brown.

Ingredients:

2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
1 teaspoon vanilla extract
Loaf Pan (9X5)

Directions:


1. Preheat oven to 350 degrees F.

2. In a large bowl, combine flour, baking soda and salt.

3. In a separate bowl, blend together butter and brown sugar. Stir in eggs, mashed bananas and vanilla until well blended.

4. Add banana mixture into flour mixture by gently stirring. Do not over stir. Only stir until the flour mixture is moist. Pour batter into a lightly greased loaf pan.

5. Bake in preheated oven for 60 to 65 minutes. Insert a toothpick into center of the loaf to check to see if the loaf is done. When the toothpick is clean, your bread is done. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Notes: Makes 1 loaf. For extra kick add nutmeg, cinnamon, applesauce, dry ginger or walnuts.

  1. Oh this looks so yummy. I've got to try this. I'm so glad I found your blog. I was doing an ol=nline search to why I can no longer find any of my favorite crafting show on DIY, HGTV or any of the networks that used to have them. Just so sad and I miss these shows. I saw the schedule you posted which are just on Monday and real early in morning like 7:00 am which unfortunately I am not able to watch TV at that time due to work. I wonder why the networks have changed. It's all landscape and home renovations. Best wishes to you.

    I have a story to tell...when my cousins and I were little our grandmother would make us banana bread with a silver dollar in it for our birthday. I LOVE BANANA BREAD!

  6. Hi Cathie ~ yum! Banana bread is the bomb (along w/zuchinni bread!) I love this recipe because it calls for BUTTER & not oil. Butter makes it tastes SO much better (IMO.) I've also seen banana bread recipes that call for sour cream and butter. Haven't tried it, but they say it makes it really moist.

    Oh, and I HAVE to have nuts in my bread...have to! LOL
